Ingredients
  

  • 1 large egg
  • 1 cup shredded zucchini
  • 0.25 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 0.25 tsp dried basil
  • 0.25 tsp dried oregano
  • salt and pepper, to taste

  • box grater or food processor for shredding zucchini
  • Baking sheet

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Shred the zucchini and squeeze out any excess moisture.
  3. In a bowl, mix together zucchini, egg, breadcrumbs, Parmesan, garlic, basil, oregano, salt, and pepper.
  4. Shape the mixture into tablespoon-sized balls and place them on a lined baking sheet.
  5. Bake for 15–20 minutes until golden and firm.

Notes

Serve with marinara sauce or ranch dip for extra flavor. Swap breadcrumbs with almond flour for a low-carb version. These bites can also be air-fried at 375°F (190°C) for 10–12 minutes for an even crispier finish.
