Ingredients
  

  • 2 cups grated zucchini (about 2 medium-sized zucchinis)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/4 cup milk
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh herbs (optional)

Method
 

  1. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, onion powder, and black pepper.
  3. In another bowl, beat eggs, then add olive oil and milk. Mix until well combined.
  4. Pour wet mixture into dry ingredients and fold until just combined. Stir in zucchini, cheese, and herbs if using.
  5. Preheat oven to 350°F (175°C). Pour batter into a greased loaf pan and smooth the top. Bake 45–50 minutes, until a toothpick inserted comes out clean.
  6. Cool in pan for 10 minutes, then transfer to a wire rack. Slice and serve warm.

Notes

Experiment with different cheeses like mozzarella, gouda, or pepper jack for a unique twist. You can also add cooked bacon bits, jalapeños, or sun-dried tomatoes for extra flavor. Best enjoyed warm with butter or as a side to soups and salads.
