Ingredients
  

  • 1.5 lb fresh strawberries, quartered
  • 4 cups cucumbers, diced
  • 1 small red onion, finely chopped
  • 8 oz feta cheese, cut into small cubes
  • 0.5 cup fresh mint, finely chopped
  • 0.33 cup olive oil
  • 0.33 cup golden balsamic vinegar
  • 2 tbsp fresh lemon juice
  • 0.25 tsp black pepper

Method
 

  1. Wash and quarter the strawberries, chop the cucumbers and onion, cube the feta cheese, and mince the fresh mint.
  2. In a small bowl, whisk together the olive oil, golden balsamic vinegar, lemon juice, and black pepper until well combined.
  3. In a large serving bowl, combine the strawberries, cucumbers, red onion, feta cheese, and fresh mint.
  4. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  5. For the best flavor, let the salad sit for 10 minutes before serving. Enjoy this crisp and refreshing dish as a side or light meal!

Notes

For added crunch, toss in toasted almonds or walnuts. If you prefer a sweeter dressing, add a teaspoon of honey. Best served chilled within a few hours of preparation.
