Method
- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large mixing bowl, beat the peanut butter, butter, granulated sugar, and brown sugar until creamy and smooth.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in the chocolate chips and chopped peanuts, if using.
- Spread the dough evenly into the prepared baking dish. Use a spatula to smooth the surface.
- Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool completely in the pan before cutting into bars.
Notes
For extra indulgence, drizzle melted chocolate over the cooled bars. Swap semi-sweet chocolate chips with dark chocolate for a less sweet version. Store in an airtight container at room temperature for up to 5 days.
