Ingredients
  

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 0.5 cup diced tomatoes
  • 2 cups beef broth (low-sodium preferred)
  • 2 cups elbow macaroni (or small pasta shapes)
  • 1 cup shredded cheddar cheese
  • 1 cup milk (whole, 2%, or skim)
  • salt & pepper to taste
  • 2 cloves garlic, minced (optional)
  • 1 tsp paprika (optional)
  • 1 cup frozen peas or carrots (optional)
  • fresh herbs (parsley or chives) for garnish

Method
 

  1. Heat a large pot or Dutch oven over medium heat. Add ground beef and diced onion. Cook until browned and onions are softened, about 7-8 minutes. Season with salt and pepper. Drain excess fat.
  2. Stir in diced tomatoes and pour in beef broth. Bring to a boil.
  3. Add macaroni to the pot. Reduce heat to medium and simmer for 7-8 minutes until al dente, stirring occasionally.
  4. Lower heat to medium-low. Stir in milk and shredded cheddar. Cook until cheese is fully melted and soup is creamy.
  5. Taste and adjust seasoning with salt and pepper. Ladle into bowls, garnish with fresh herbs if desired. Serve hot with bread or salad.

Notes

Swap ground beef with ground turkey for a lighter option. Stir in frozen peas or carrots for extra veggies. Try paprika or garlic for more depth of flavor. Serve with crusty bread or a side salad.
