- Heat a large pot or Dutch oven over medium heat. Add ground beef and diced onion. Cook until browned and onions are softened, about 7-8 minutes. Season with salt and pepper. Drain excess fat.
- Stir in diced tomatoes and pour in beef broth. Bring to a boil.
- Add macaroni to the pot. Reduce heat to medium and simmer for 7-8 minutes until al dente, stirring occasionally.
- Lower heat to medium-low. Stir in milk and shredded cheddar. Cook until cheese is fully melted and soup is creamy.
- Taste and adjust seasoning with salt and pepper. Ladle into bowls, garnish with fresh herbs if desired. Serve hot with bread or salad.
