These Mini Caprese Bites are a fun twist on the classic Caprese salad — baked in crispy pastry cups with creamy mashed potatoes, spinach, mozzarella, and cherry tomatoes, all finished with Parmesan and herbs. Perfect as an elegant appetizer or party snack!

Ingredients
  

  • 12 mini pastry cups
  • 1/2 cup mashed potatoes
  • 6 cherry tomatoes, halved
  • 1/2 cup baby spinach, chopped
  • 1/4 cup mozzarella cheese, diced
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1 tbsp grated Parmesan cheese

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Fill each pastry cup with mashed potatoes.
  3. Add chopped spinach, diced mozzarella, and half a cherry tomato on top.
  4. Drizzle with olive oil and sprinkle with salt, pepper, and oregano.
  5. Top with grated Parmesan and bake for 10–12 minutes until cheese melts.
  6. Serve warm and enjoy.

Notes

For extra freshness, garnish with fresh basil leaves just before serving. You can also drizzle with balsamic glaze for added flavor. Great for parties, potlucks, or as a light appetizer.
