- In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain any excess fat. Stir in taco seasoning according to packet directions, usually with added water. Simmer a few minutes to absorb flavors.
- In a baking or casserole dish, layer refried beans on the bottom. Spread sour cream over beans, then add seasoned ground beef.
- Sprinkle cheddar and Monterey Jack cheeses evenly over beef mixture.
- Top with diced tomatoes, green onions, black olives, and jalapeños if desired.
- Preheat oven to 350°F (175°C). Bake dip for 20–25 minutes or until cheese is melted and bubbly.
- Remove from oven and serve hot with tortilla chips, crackers, or veggie sticks.
Notes
For a spicier kick, add extra jalapeños or a drizzle of hot sauce. You can prepare the dip ahead of time, cover, and refrigerate — then bake just before serving. Serve with tortilla chips, crackers, or fresh veggies for dipping.
