Ingredients
  

  • 500 g ground kangaroo meat
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp ground cinnamon
  • 0.5 tsp smoked paprika
  • salt and pepper, to taste
  • 2 tbsp chopped fresh parsley
  • 1 tbsp olive oil
  • 8 skewers (wooden or metal)

Method
 

  1. In a bowl, combine ground kangaroo meat, onion, garlic, spices, salt, pepper, parsley, and olive oil. Mix well until evenly combined.
  2. Divide the mixture into 8 portions. Shape each portion around a skewer into a long, oval kofta shape.
  3. Place the koftas on a plate, cover, and refrigerate for 30 minutes to firm up.
  4. Preheat a grill or skillet over medium-high heat.
  5. Cook the koftas for 8–10 minutes, turning occasionally, until nicely browned and cooked through.
  6. Serve hot with flatbread, yogurt sauce, or a fresh salad.

Notes

Serve with warm flatbread, a cooling yogurt sauce, or a crisp salad. For extra flavor, marinate the mixture with a splash of lemon juice. Wooden skewers should be soaked in water for 30 minutes before grilling to prevent burning.
