Method
- Preheat your oven to 425°F (220°C). If using a fan-forced oven, set it to 400°F (200°C).
- Place the chicken breasts between two sheets of baking paper or plastic wrap. Gently pound to an even 1.5 cm (0.6 inches) thickness. Slice large pieces in half horizontally if needed.
- In a small bowl, combine brown sugar, paprika, oregano, garlic powder, salt, and pepper. Stir to mix.
- Line a baking sheet with foil and parchment. Place chicken smooth-side down. Drizzle 1 tsp olive oil, rub in, then sprinkle half the seasoning. Flip and repeat with oil and remaining seasoning.
- Bake for 18 minutes, or until internal temp reaches 165°F (75°C). For thicker chicken, add 3–5 minutes.
- Transfer to a clean plate and rest 3–5 minutes.
- Garnish with parsley or lemon juice before serving.
Notes
Use a meat thermometer to avoid overcooking. For extra flavor, marinate the chicken for a few hours before baking. Serve with roasted vegetables, mashed potatoes, or salad.
