Ingredients

  • 1 large egg
  • 2 tsp honey
  • 2 cups Ritz crackers, crushed (about 45 to 50 crackers)
  • 0.5 tsp salt
  • 1.5 lbs walleye fillets
  • 0.33 to 0.5 cup canola oil
  • Minced fresh parsley, optional, for garnish
  • Lemon wedges, optional, for serving

Equipment

  • shallow bowls for coating mixtures
  • cast-iron or heavy skillet for frying
  • Tongs for flipping fish
  • paper towels for draining excess oil
  • serving platter

Method

  1. In a shallow bowl, beat the egg and mix in honey. In another dish, combine crushed crackers and salt.
  2. Dip the fish into the egg mixture, then coat it well with the cracker mixture.
  3. Heat oil in a cast-iron or heavy skillet over medium heat. Cook fish for 3–5 minutes per side until golden and flaky.
  4. Garnish with parsley and serve with lemon wedges if desired.

Notes

For best results, use fresh walleye fillets, though other white fish like cod or perch also work well. Serve with lemon wedges for brightness and parsley for a fresh finish.
