Ingredients
  

  • 2 lbs beef stew meat
  • 4 cups beef broth
  • 3 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 2 tbsp olive oil
  • 1 tsp rosemary
  • salt and pepper, to taste

Method
 

  1. Heat olive oil in a large pot. Coat beef in flour and brown on all sides.
  2. Add onion, carrots, and potatoes. Stir in tomato paste and rosemary.
  3. Pour in beef broth and bring to a boil. Reduce heat, cover, and simmer for 2 hours or until beef is tender. Season with salt and pepper.

Notes

For deeper flavor,  You can also include celery, peas, or mushrooms for extra heartiness. Best served with crusty bread.
