- Gather all ingredients. Preheat oven to 375°F (190°C). Let ground beef sit at room temperature for 15 minutes. Open and separate biscuit dough and set aside.
- Heat a large skillet over medium heat. Add ground beef, salt, and pepper. Cook 5–7 minutes, crumbling until no pink remains (internal temp 160°F/71°C). Drain excess grease. Stir in garlic powder and half the cheddar cheese, mixing until melted. Set aside to cool slightly.
- Flatten each biscuit into a 4-inch circle. Spoon 1 tbsp beef mixture into the center, top with 1 tbsp cheddar cheese, then cover with another flattened biscuit. Seal edges firmly. Repeat with all biscuits.
- Arrange bombs seam-side down on an ungreased baking sheet, leaving 2 inches between each. Bake 15–20 minutes, until golden brown.
- Mix melted butter, Parmesan, and garlic powder. Brush mixture over bombs immediately after baking.
Notes
Serve hot with ketchup, ranch, or marinara dipping sauce. You can prepare the beef mixture ahead of time and store it in the fridge. For an extra kick, add diced jalapeños or red pepper flakes to the filling.
