French Onion Soup

Ingredients
  

  • 4 large onions, thinly sliced
  • 4 cups beef broth
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup Gruyère cheese, shredded
  • 4 slices baguette
  • salt and pepper, to taste

Method
 

  1. Melt butter in a pot and cook onions until caramelized (about 20 minutes).
  2. Stir in flour and cook for 1 minute. Add beef broth and simmer for 15 minutes.
  3. Toast baguette slices. Ladle soup into bowls, top with bread and cheese. Broil until cheese is melted.

Notes

For best flavor, take your time caramelizing the onions until deep golden brown. You can substitute Swiss cheese if Gruyère is unavailable. Serve immediately while hot and bubbly.
