- Preheat oven to 325°F (160°C).
- Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into the bottom of a springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Pour filling over prepared crust.
- Bake for 50–60 minutes, until the center is set. Allow cheesecake to cool, then chill for at least 4 hours (preferably overnight).
- Drizzle with caramel sauce and sprinkle chopped pecans over the top before serving.
Notes
For extra flavor, toast the pecans lightly before sprinkling on top. You can also make this cheesecake a day ahead, as the flavors improve after chilling overnight. Serve with additional caramel drizzle for an even richer experience.
