- If using fresh corn, cut kernels off the cob. For canned corn, drain and rinse. For frozen, thaw and drain excess moisture.
- In a large mixing bowl, combine sour cream, mayonnaise, and softened cream cheese. Stir until smooth and well blended. Use a hand mixer if needed.
- Stir in shredded cheddar, pepper jack, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper.
- Fold in corn, green onions, red bell pepper, jalapeño, and cilantro (if using). Mix well.
Notes
For a baked version, transfer the mixture to an oven-safe dish, top with extra cheese, and bake at 375°F (190°C) for 20 minutes until golden and bubbly. Serve with tortilla chips, crackers, or veggie sticks. Adjust heat by adding or removing jalapeño seeds.
