Ingredients
  

  • 2 cups sweet corn (fresh, canned, or frozen)
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • salt and black pepper, to taste
  • 1/2 cup chopped green onions
  • 1/2 cup diced red bell pepper
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • 1/4 cup chopped fresh cilantro (optional)

Method
 

  1. If using fresh corn, cut kernels off the cob. For canned corn, drain and rinse. For frozen, thaw and drain excess moisture.
  2. In a large mixing bowl, combine sour cream, mayonnaise, and softened cream cheese. Stir until smooth and well blended. Use a hand mixer if needed.
  3. Stir in shredded cheddar, pepper jack, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper.
  4. Fold in corn, green onions, red bell pepper, jalapeño, and cilantro (if using). Mix well.

Notes

For a baked version, transfer the mixture to an oven-safe dish, top with extra cheese, and bake at 375°F (190°C) for 20 minutes until golden and bubbly. Serve with tortilla chips, crackers, or veggie sticks. Adjust heat by adding or removing jalapeño seeds.
