Ingredients
  

  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1–2 tbsp fresh mint, chopped (optional)
  • 1 small jalapeño or serrano pepper, minced (optional)
  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1 tsp maple syrup or sugar (optional)
  • 1 pinch salt

Method
 

  1. In a large bowl, combine the diced mango, thinly sliced red bell pepper, red onion, chopped cilantro, mint (if using), and minced jalapeño/serrano (if using).
  2. In a small bowl or jar, whisk together the lime juice, olive oil, maple syrup or sugar (if using), and a pinch of salt until well combined.
  3. Pour the lime dressing over the mango mixture and toss gently to combine.
  4. Taste and adjust lime juice, sweetness, or salt if needed.
  5. Serve immediately as a side dish, topping for grilled foods, or light snack.

Notes

For extra flavor, let the salad rest for 10–15 minutes before serving so the lime dressing can infuse the ingredients. Adjust spice level by adding or removing seeds from the jalapeño. Best enjoyed fresh.
