Ingredients
  

  • 2 large boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/2 tsp dried thyme or Italian seasoning (optional)
  • juice of 1/2 lemon (optional)

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Pound chicken breasts to an even thickness with a meat mallet or rolling pin.
  3. Rub chicken on both sides with olive oil.
  4. Season with salt, garlic powder, black pepper, paprika, and thyme or Italian seasoning.
  5. Arrange chicken in a baking dish or on a foil-lined sheet.
  6. Bake uncovered for 20–25 minutes, until internal temperature reaches 165°F (74°C).
  7. Rest for 5 minutes to keep juices inside.
  8. Optional: Squeeze fresh lemon juice over before serving.

Notes

Pounding chicken to even thickness ensures quick and even cooking. Use a meat thermometer for best results. Try marinating the chicken for a few hours for extra flavor.
