Ingredients
  

  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment paper or grease lightly with non-stick spray.
  2. Cream butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy. Beat in egg and vanilla until smooth.
  3. Whisk flour, baking soda, salt, and cinnamon in a bowl. Gradually mix dry ingredients into wet until dough forms.
  4. Spread dough evenly into prepared pan with spatula or hands.
  5. In a small bowl, stir brown sugar, cinnamon, and melted butter. Drizzle over dough and swirl gently with a knife.
  6. Bake 22–25 minutes until golden and set. Cool completely in the pan.
  7. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
  8. Spread frosting evenly over cooled bars. Chill 30 minutes before slicing into squares.

Notes

For a stronger cinnamon flavor, add a pinch of nutmeg or cardamom to the swirl. Store in an airtight container in the fridge for up to 5 days, or freeze for longer storage. Best served slightly chilled or at room temperature.
