Ingredients
  

  • 200 grams chicken breast, boneless and skinless
  • 150 grams pasta, any type
  • 1 cup mixed vegetables, frozen or fresh
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Saucepan for cooking pasta
  • Colander to drain pasta
  • frying pan for cooking chicken and vegetables
  • wooden spoon
  • knife and cutting board for prepping chicken and vegetables

Method
 

  1. Cook pasta according to package instructions, then drain.
  2. Heat olive oil in a pan over medium heat.
  3. Add minced garlic and cook for 1 minute.
  4. Add chicken pieces and cook until browned, about 5–7 minutes.
  5. Stir in vegetables, salt, and pepper; cook for another 5 minutes.

Notes

You can use whole wheat pasta for added fiber or swap in gluten-free pasta if preferred. Fresh or frozen vegetables both work well. Add a pinch of chili flakes for a little heat.
