Ingredients

  • 1 package (16 oz) breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • ground black pepper, to taste
  • 1 tbsp olive oil, or as needed (optional)
  • 1 12-inch pre-baked pizza crust
  • cooking spray
  • 6 eggs
  • 1/4 cup milk (for scrambled eggs)
  • 1 cup shredded Cheddar cheese, or as desired

Equipment

  • Large skillet
  • Whisk
  • Baking sheet
  • Oven
  • Spatula

Method

  1. Heat a large skillet over medium heat. Cook sausage until browned, 5–7 minutes. Drain grease. Stir in flour until dissolved, then add 2 cups milk. Stir until gravy thickens, about 10 minutes. Season with black pepper.
  2. Preheat oven to 400°F (200°C).
  3. Place pizza crust on a baking sheet; brush with olive oil. Spread 1/2 of the gravy over the crust.
  4. Spray a skillet with cooking spray. Whisk eggs with 1/4 cup milk. Scramble over medium heat until set, about 5 minutes.
  5. Top pizza with scrambled eggs and Cheddar cheese.
  6. Bake for 10–15 minutes until crust is golden and cheese bubbly.

Notes

Serve with a side of hot sauce for extra kick. Try swapping Cheddar with mozzarella or pepper jack for a different flavor. Leftovers reheat well in the oven or air fryer.
