- Heat a large skillet over medium heat. Cook sausage until browned, 5–7 minutes. Drain grease. Stir in flour until dissolved, then add 2 cups milk. Stir until gravy thickens, about 10 minutes. Season with black pepper.
- Preheat oven to 400°F (200°C).
- Place pizza crust on a baking sheet; brush with olive oil. Spread 1/2 of the gravy over the crust.
- Spray a skillet with cooking spray. Whisk eggs with 1/4 cup milk. Scramble over medium heat until set, about 5 minutes.
- Top pizza with scrambled eggs and Cheddar cheese.
- Bake for 10–15 minutes until crust is golden and cheese bubbly.
Notes
Serve with a side of hot sauce for extra kick. Try swapping Cheddar with mozzarella or pepper jack for a different flavor. Leftovers reheat well in the oven or air fryer.
