  • 2 cups rice
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 0.5 cup mayonnaise
  • 2 tbsp Sriracha
  • 1 tbsp honey
  • 2 tbsp lime juice
  • 2 wedges lime (for garnish)
  • 0.25 cup fresh herbs (cilantro or green onions, for garnish)

Method
 

  1. Prepare rice according to package instructions until fluffy. Set aside.
  2. Heat oil in a skillet over medium-high heat. Cook diced chicken for 5–7 minutes until golden brown and cooked through.
  3. In a small bowl, whisk together mayonnaise, Sriracha, honey, and lime juice until smooth to create the Bang Bang sauce.
  4. Add the cooked chicken to the sauce and toss until each piece is well coated.
  5. Assemble the bowls: place rice as the base, add mixed vegetables, and top with the saucy chicken mixture.
  6. Garnish with lime wedges and fresh herbs, if desired.

Notes

Swap rice with quinoa or cauliflower rice for a lighter option. Adjust the Sriracha to control spice level. You can also use Greek yogurt in place of mayonnaise for a lighter sauce version. Perfect for meal prep and weeknight dinners!
