Ingredients
  

  • 1 lb ground chicken
  • 0.5 cup shredded mozzarella cheese (for topping)
  • 0.5 cup breadcrumbs
  • 2 cloves garlic, minced
  • 0.25 tsp red pepper flakes (optional)
  • 1 egg
  • 0.25 cup fresh parsley, chopped
  • 1 tbsp Italian seasoning
  • 0.5 cup grated Parmesan cheese
  • salt and pepper, to taste
  • 2 tbsp olive oil (for brushing)

Method
 

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. This helps for easy clean-up later!
  2. In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, Italian seasoning, chopped parsley, red pepper flakes (if using), salt, and pepper. Mix everything together until well incorporated – your hands work best for this!
  3. Shape the mixture into 4 equal-sized mini meatloaves and place them on the prepared baking sheet.
  4. Take the olive oil and lightly brush the tops of each meatloaf. This will make them golden and delicious as they bake!
  5. Bake in the oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C). You’ll know they're ready when the kitchen smells amazing!
  6. Once done, remove the meatloaves from the oven and sprinkle the shredded mozzarella on top of each one. Pop them back in the oven for an additional 5 minutes to let that cheese melt and bubble – yum!
  7. Finally, garnish with any extra parsley you have and serve these savory meatloaves hot on a platter!

Notes

Serve with roasted vegetables, mashed potatoes, or a simple green salad. For extra flavor, drizzle with marinara or serve alongside garlic bread. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
